Chicken Fajita– Mild style
Believe it or not, some of my favorite recipes to make are simple and lack a lot of extra spices and flavors. Sometimes I really just want to taste the food in its most plain form. This recipe is one of those…Oh, and if you want to be technical, this might actually be a taco.
Ingredients
2 skinless chicken breasts, sliced thinly (approximately 3/4 pound)
Salt and pepper to taste
Sweet peppers, sliced (The ones pictured are the small ones you find on vegetable trays, but pick your favorites)
1 medium onion, sliced
Olive oil
Fresh cilantro
Sour cream, guacamole, salsa (any toppings you like)
Tortillas
The fun!
Heat a skillet with a tablespoon or so of olive oil. Saute the chicken until it is cooked, adding your desired amount of salt and pepper. Remove the chicken from the pan.
Heat another tablespoon or so of olive oil in the pan. Saute the onions and peppers until tender. I leave mine a little on the crunchier side, but it is a personal preference. Remove from the pan.
Assemble the fajitas, as you desire and top with fresh cilantro. I used whole leaf, but chopped works well too.
Join the carnival on Thursday’s and make something from scratch. It doesn’t have to be food!
