Menu Monday: 19 July 2010


How can it be Monday already? Again? Where is my summer going? Jeesh!  We did a pretty good job of sticking to the menu last week, though I discovered my son sometimes does and sometimes does not like pesto. He really likes plain noodles. Oh well…  This week’s plan is full of local fresh produce, including my book club on Thursday, though I am not 100% sure all that I will make for that day.

Monday: Veggie Burgers with raw veggies and peaches on the side

Tuesday: eggplant, squash tomato bake (if it goes well, I’ll post it…experiment in progress)

Wednesday: Easy Over Roasted Chicken (kinda like this, but I put mine in a roasting pan)

Thursday: Book club– basil hummus, fresh veggies and fruits, black bean dip, quinoa quiche and nutella cheesecake brownies. And wine. :)

Friday: Quinoa Pasta with Pesto

Saturday:

Lunch: Veggies with hummus and green smoothies

Dinner: leftovers

Sunday:

Lunch: Grilled brats and burgers with Grilled Potatoes

Dinner:
