Chicken Strips

I realize that just about everywhere in the world you can buy some sort of frozen chicken strips, but I LOVE these home made ones– mostly because they taste a whole lot better than the store bought ones, they’re easy to make, and I KNOW what is in them.

What you need:

Enough boneless, skinless chicken breasts to feed your family (or buy the pre-sliced ones in the meat counter)

Italian style Bread crumbs (make your own or use the ones from the store)

Garlic

Olive Oil

How to do it!

1. Heat olive oil in a pan with garlic– low heat about 15 minutes. Do not allow it to get too hot. This infuses the garlic flavor in the olive oil a bit.

2. Set oil aside to cool.

3. Heat over to 350 F.

4. Slice breasts in to “strip” sized pieces.

5. When oil is cool, dip strip in the oil and then breadcrumbs.

6. Place on baking sheet.

7. Bake 15 – 20 minutes (until juice is clear)

8. Eat!

To make your own Italian breadcrumbs– dry bread and then chip it up finely (I use a blender). Add chopped basil and oregano or other Italian style herbs and stir well.

Sometimes I also add Parmesan cheese to the crumbs.

    Ooo.. I like you how dip the strips in garlic infused oil… never tried that!

    I finally got around to trying this recipe and it turned out great! My daughter loved it. I had to make my own bread crumbs since I haven’t found them here yet but even with that extra step, I was able to prepare the chicken fingers pretty quickly. Thanks!
