Stir-Fry Quinoa

I took some inspiration from Emily’s Healthy Un-Fried Rice to put this dish together.
The Players
1 medium onion, diced
2 cups sliced carrots
1 cup edamame
1 cup peas
1 cup quinoa, rinsed
1 1/2 cup water
1 tablespoon oil (I used olive this time)
3 tablespoons soy sauce
3 eggs (we like egg … feel free to use less)
The Fun
- In a small to mid-sized pan, heat water to boil. Add quinoa. Cover and reduce heat to simmer for 15 minutes. Once done, remove from heat and allow to sit for 5 minutes before fluffing with a fork.
- Whisk together olive oil and soy sauce.
- While quinoa is cooking, saute onion, garlic, and carrots in a wok or pan of choice for 7-10 minutes before adding edamame and peas.
- Add cooked quinoa and fry for five minutes.
- Add sauce and continue to mix thoroughly.
- Push quinoa mixture to the size and scramble the eggs in the middle.
- Mix together and serve.




I never thought about doing a stirfry quinoa, it sure makes sense though! Thanks for sharing.
