Berry-Good Smoothie

I know I have waxed poetic about my love of smoothies before, but I have to tell you once more. I love smoothies. To make them even more amazing, I was ordering a few waste-free lunch items for TB and myself, when I discovered Vapur containers. While I am generally not a fan of plastics, I ordered this reusable container in hopes it would be perfect for packing smoothies to take in our lunches. They work amazing. TB and I have brought smoothies in our lunches this week, and he has gulped each of them down. The best part is knowing that what is in the container is healthy and wholesome. He ends up drinking around a cup of spinach each day. Vapur is marketed as a water bottle, but for us, it has become a smoothie bottle.
On the inside…
Mang0-Peach-Green Smoothie
The Players
2 cups (approximately) packed spinach
3 heaping tablespoons of flax seed
5 ounces frozen peaches
5 ounces frozen mango pieces
1.5 cups orange juice
The Fun
1. Place in blender in order above.
2. Liquify.
3. Pour and enjoy!
We’re big fans of smoothies in our home, and I love that it is an easy way to get TB to eat some spinach without consuming a salad, plus we usually get some flaxseed in there. Flaxseed is a great source of fiber, as well as omega 3 fatty acids. Also, while we had slipped some in giving TB more dairy once we moved east until we suspected it was causing him some problems, we are not big fans of dairy consumption in our home, and spinach allows us to get him a bunch of healthy vitamins and minerals. Plus, it’s good for Kevin and me too!
The Players
3 cups fresh pineapple cut in to large chunks
2 cups baby spinach
3 tablespoons ground flax seed
Handful of ice
The Fun
1. Place items in blender in order listed. Because the pineapple is fresh, no additional liquid should be needed.
2. Blend until smooth.
3. Pour.
4. Drink.

This smoothie took a bit of a detour when I found out we were out of ground flax seed, but in the end, it worked out alright. I used some roasted whole flax seeds, which the vitamix pulverized anyway.
The Players
2 cups packed spinach (fresh)
1 cup greek yogurt– plain
2 cups mixed berries (frozen)
2 tablespoons roasted flax seeds
1-2 cups orange juice
The Fun
Place ingredients in blender in the order listed. Blend until smooth.
If you like your smoothie thinner, add more juice. If you like it thick, use less juice.
Drink!

As I mentioned last week, I am going to try to remember to measure and post some of my favorite smoothie recipes. A lot of them are similar, but I promise, they are all tasty!

1-2 cups apple juice (or water)
