
I had been thinking about all of the wonderful things I like to do with steel cut oats and realized I haven’t shared hardly any of them! This one is super easy when done in your rice cooker overnight. A crock pot will work too.
The Players
1 cup steel cut oats
4 tablespoons brown sugar
1 teaspoon cinnamon (or more!)
2 medium to large apples, cubed
Water
The Fun
Add all ingredients in order listed above.
Set rice cooker for desired finish time.
Go to bed. 
Wake up to hot steel cut oats.
I have mentioned before that I enjoy breakfast foods. When cooking overseas, it is hard to make big batches of things like pancakes and french toast without my griddle. So an easy way for us to have french toast is in a casserole. This french toast casserole is very delicious and easy. You do have to make it the day before so it can sit in the refrigerator overnight though. It is very thick as you can see from the picture below.

Once it is on the plate, it doesn’t require much (if any) syrup because it is very sweet.

Lest anyone believe all I do is feed my family healthy food, I offer this amazing recipe from Happy Herbivore. Yes, the recipe is healthier than what you’d get at the doughnut shop, but the Happy Herbivore “Baked Low Fat Whole Wheat Chocolate-Glazed Vegan Doughnuts Recipe” still tastes great.
This is a recipe that I found about 4 years ago when I was in search of something to replace an egg casserole that might be a tad bit healthier. When I tried the Crustless Spinach Quiche from the Spark People Recipe Database, I knew I had found the winner. It has a really great taste without using a ton of different cheeses like other egg casseroles. The last time I made it, I actually used ricotta and parmesan because we were in Italy and those are the two freshest cheeses I could find to produce the most robust taste.
Ingredients:
6 large eggs
300 grams 1% cottage cheese
100 grams grated cheddar cheese
2 tablespoons Dijon mustard
125 grams Spanish onion
1-10o z package frozen spinach
1 clove minced garlic
1/4 teaspoon black pepper or to taste
Directions:
1. Combine eggs, cheeses, mustard and pepper.
2. Saute’ garlic, onion and frozen spinach until all excess moisture from spinach evaporates. Add to egg mixture.
3. Pour into 10″ pie plate. Make sure mixture is well blended. Makes 6 generous pieces.
4. Bake in 325F oven for 1 hour or until set.

I’m traveling for work right now, so the recipes might be a bit simple. I try to save the REALLY easy stuff (i.e. things I can do by memory without thinking) for when I travel, and this is definitely one of those! I grew up eating the most amazing fried eggs ever prepared by my Grandma Wegner. Yes, I know. It is a biased opinion, but I loved her eggs. I have recreated them to perfection in the pat, but let’s just say they include A LOT of butter and aren’t very healthy. OK, I cannot think of a fried egg that is healthy. None the less… Here is one that includes less than a half stick of butter.
The Players
2 eggs
1/2 tbsp butter (or use oil)
salt and pepper to taste
The Fun
1. Melt butter in frying pan over medium heat until hot.
2. Crack eggs in to pan. Season with salt and pepper and fry until well cooked (like above photo).
3. flip and cook for less than a minute (less time if you want runny yolks, more time if you want over-hard eggs).
4. Place on plate and eat with toast.
Like I said, very easy, though the flipping and timing takes perfecting.
