Fish Bites

Allow me to share a secret. My son loves fish sticks. I, however, dislike feeding him fish sticks. Enter these fish bites. They are easy to make, and I’d like to think you could freeze them, but we never have any left over, so I am not sure if they do or not. I was out of paprika when I made this, and I forgot to spray with olive oil. Whoops. It still tasted good though. :)

The Players

1 pound fish (I used wild caught talapia, but any firm white fish works)

1 cup whole wheat flour

1 tablespoon Garlic Powder

1 tablespoon salt

1 teaspoon paprika

3 eggs, beaten

1 cup bread crumbs

1 cup Italian season bread crumbs

The Fun

  1. Preheat oven to 450.
  2. Cut your fish in to bite sized nuggets.
  3. In bowl number 1 mix flour, garlic powder, paprika and salt.
  4. In bowl number two, beat eggs.
  5. In bowl number three, mix bread crumbs.
  6. Spray a baking sheet with olive oil or line with parchment.
  7. Dip fish in flour, then egg, then bread crumbs. (Your fingers will get dirty, but it is ok, I promise.)  Place on baking sheet in a single layer.
  8. Spray lightly with olive oil.
  9. Bake for 18-20 minutes or until lightly browned.
  10. Devour!

Fish with Pasta

I have no idea what to call this dish, but it is a dish with a history! While my husband was playing basketball in Gravelines France, I  hung out a lot with a couple of the French wives. One of them taught me to make this super easy, super tasty fish dish. I have struggled to recreate it in the US, but I finally struck gold! I used to do it in little aluminum foil pouches/boats, which works great for easy clean up, but this time I went for a corning ware dish in order to make it easier to get a small portion for TB.

The Players

1 cup creme fraiche

1-2 pounds sole, cod or white fish of choice

Chinese Five Spice

Curry powder

Salt (optional)

The Fun

1. Heat oven to 350 degrees.

2. Spread approximately half a cup of creme fraiche on bottom of dish. Sprinkle Chinese Five Spice and curry powder over creme fraiche (I use about 1/2 teaspoon of each, I think, but I’ve never measured…I do it until it’s fairly covered, but not so much I can’t tell there is creme fraiche under it).

3. Place fish on top of creme fraiche and seasoning. Spread additional creme fraiche over the fish and sprinkle with more Chinese Five Spice and Curry powder. Cover dish and bake for approximately 30 minutes or until fish is cooked thoroughly.

Tips:

*** I serve mine over pasta, as the creme fraiche makes a nice sauce and it goes well with the fish. While the fish is baking cook the noodles.

***Don’t have Chinese Five Spice? No problem. Sprinkle with a little seasoning salt or kosher salt. Plain curry works well too.

***If you want more sauce, use more creme fraiche and seasoning on the bottom. :)
