In the event you have not figured it out yet, I am traveling a lot right now. I keep waiting for it to die down, but it seems like it will be like this until October/November/December time frame. A few trips are for personal reasons, but mostly I am traveling for work, which leaves Kevin to pick the meals as he chooses. I give him complete credit, because I come home and our son is always well fed and satisfied. I hear meals even involve quite a few vegetables, though it appears that Pasta with Meat Sauce is in regular rotation for those two.
Enough about my jaunting around.
Monday: Leftover quinoa dish (“recipe” and nicer photo to be posted soon, but you can see it on FB; vegan)
Tuesday: Broccoli “Cheese” Pasta Bake (vegan)
Wednesday: Leftovers; Sandwiches and fruit
Thursday-Sunday: Mama heads to the beach and the guys are left to fend for themselves! I’ve had this trip planned for months– well before I started traveling for work. I have serious mommy-guilt about it, but I am determined to have fun with my friends.

Well, my grand plan to have a 3-4 week meal rotation is on temporary hold while I travel for work. I was gone last week and will be again for the two weeks after this one. After that, I will be gone one to two weeks of each month until mid-November.
Monday: Leftover roast chicken, fresh steamed green beans and sauteed okra
Tuesday: Homemade Pizza
Wednesday: Sandwiches and fruit
Thursday: Nacho Salad
Friday: Fried eggplant topped with tofu on buns (this is a new combo, but I’m going for it!)

Lunch: Chicken with vegetables
Dinner: leftovers
Sunday:
Lunch: Out to eat after church
Dinner: Adults have an alumni event; TB gets leftovers

After spending last week in Denver, I am ready to cook again. The problem? My guys are in Houston! Because of this, my meals will be light and easy this week. The truth is, I do not really enjoy cooking or baking for myself. My enjoyment comes from sharing the food I prepare with others.
