Berries and Travel

Do those berries not look delicious? We devoured them the week after Easter. :)

I am sorry for the lack of posts lately. I am traveling for work, and lucky me…I managed to snag a cold along the way. I have a lot of amazing foods to share, including some dairy free Easter delights.  In the mean time, I am sharing the drool-worthy berries, because truth be told, we have been eating more raw foods lately. Fruits, smoothies, vegetables…all healthy, and allergen free. I forgot how eating raw makes me feel– great! :)

Happy Valentine’s Day

Happy Valentine’s Day from my kitchen to yours. TB and I made heart shaped sugar cookies, and then the entire family decorated them. Now that’s what I call love. :)

Welcome Erin!

When I started this site, I was hoping to convince some friends to share what is on their table too. So far, I think most of my friends think I am kidding…or are intimidated. I’ll keep working on them. However, one friend, Erin, has offered to post two recipes a month for an entire year!  Erin’s first post will be on Wednesday. When I asked Erin to write a bit about herself, she did a bang up job (see below). You can read Erin’s writings on her blog, Married to a Baller. I have added an “About Erin” page with her profile above.

There are a few additional changes coming, including some better thought out categories, an Amazon aStore and (hopefully) a revision to the header so it says Meals with Maria & Friends. I hope you will like the changes, and please, feel free to contact me with ideas and suggestions. Oh, there’ll be a contest in February too, so look for that! :)

Without further delay, here is a bit about Erin!  Please take a few minutes to welcome her to the blog. I know she (and I) will appreciate it.

Hi everyone.  My name is Erin Crispin and if you had told my husband that I was going to guest posting on a cooking blog when we first got married, I think he would have laughed (let’s ignore the fact that blogs did not exist when we got married).  In other words: I was a terrible cook.  I had never really done it growing up and did not do it much in college.  So getting married straight out of college and having a husband who was a professional basketball player to cook for, was incredibly intimidating.  It was not pretty, but over the years I have collected recipes from family members and online resources and tried and failed many times.  It has been a process and here are my current cooking goals:
1. I want it to be simple.
2. I want it to be as healthy as possible by trying to avoid pre-packaged ingredients.
3. I am trying to use as little dairy as possible.  We are trying to eliminate it in our home slowly, so many of my recipes will either be of dairy-free foods or substituting dairy with other ingredients.  There are some yummy treats you just can’t substitute though, so you will get those too.
4. I cook overseas for the majority of the year, so the ingredients I use are often simple and easy to find.
5. I want it to satisfy the 5 mouths I am currently feeding in our home (soon to be 6 when our 8-month-old is big enough to join us at the table).  One of my biggest challenges is combining this goal with goal #2.
I look forward to blogging here twice a month and hopefully sharing a recipe that could become a family favorite of yours.

The “Other” Cookies

I generally pick some of the best photos for the blog, and my baking posts of the last month definitely fall under that category. On this day after Christmas, however, I share a picture of the “others.” For those of you who don’t know, I often times cook and bake with my son. He turned four on the 19th, so this sometimes produces results that are less than beautiful. None the less, we enjoy the time together.
