Banana Blueberry Whole Wheat Muffins (vegan)

With trying to figure out what is causing my son’s eczema and cutting out dairy as a first option, I am searching for new and amazing ways to feed him foods that will be tasty and healthy. My blueberry muffin recipe is certainly alterable, but I thought I would give Emily’s (Daily Garnish) Banana Blueberry Whole Wheat Muffins a try, and they were a big hit. The Boy told me that these are the “best blueberry muffins. Better than the other ones.” I would feel sad that he chose Emily’s over mine, but I’m not. These are vegan, and much to my delight, they were still moist and tasty on Sunday when he ate the last one.

A Berry-Green-Flax Smoothie

This smoothie took a bit of a detour when I found out we were out of ground flax seed, but in the end, it worked out alright. I used some roasted whole flax seeds, which the vitamix pulverized anyway.

The Players

2 cups packed spinach (fresh)

1 cup greek yogurt– plain

2 cups mixed berries (frozen)

2 tablespoons roasted flax seeds

1-2 cups orange juice

The Fun

Place ingredients in blender in the order listed. Blend until smooth.

If you like your smoothie thinner, add more juice. If you like it thick, use less juice.

Drink!

Blueberry Muffins

I love muffins. I am not sure if that is obvious yet or not, but I do. I like healthy muffins, not so healthy muffins, and muffins that are down right unhealthy. There’s something about how portable they are that entices me to make them nearly every week and then snack on them all week.  This recipe is not really anything special– plain old blueberry muffins– but they are oh, so good!

The Players

Strussel Topping

1/4 cup flour

1/4 cup packed brown sugar

1/4 teaspoon ground cinnamon

2 tablespoons firm butter (or margarine)

Muffins

3/4 cup milk (I used almond0

1/4 cup vegetable oil

1 large egg

2 cups flour

1/2 cup sugar

2 teaspoons baking powder

1/2 teaspoon salt

1 cup fresh or frozen blueberries

The Fun

1. Heat oven to 400 degrees. Grease bottoms only of 12 muffin cups or line with paper baking cups.

2. Make strussel topping and set aside.

3. Beat milk, oil and egg in large bowl with fork or wire whisk. Stir in flour, sugar, baking powered and salt all at once just until flour is moistened (batter will be lumpy).

4. Fold in Blueberries.

5. Divide batter evenly among muffin cups. Sprinkle each with about 1 tablespoon Strussel topping.

6. Bake 20-25 minutes or until golden brown. If baked in a greased pan , let stand around 5 minutes in pan before moving to wire rack. If baked in paper cups, immediately remove to wire rack.

Strawberry-Blueberry-Green Smoothie

Let me make a confession. I love smoothies. Usually, I make them completely dairy free and don’t measure.  I have decided, however, to start making a more conscious effort to at least note approximate measurements so I can share with you all! Here is one my son and I whipped up last week.

The Players

1 large handful spinach (around 1.5 cups)

4 large strawberries

1/2 cup frozen blueberries

1 cup Greek yogurt (plain)

1 tablespoon ground flax seed

1/2 cup water (or juice)

Honey (to taste– I ended up adding it later to my son’s, but I prefer without)

The Fun

Place ingredients in the blender in the order listed.

Blend on high until smooth and creamy.

Pour in to glasses.

 

This is really enough for about two glasses like the one picture (I think it’s 12-16 ounces).

Refreshing Smoothie 1: Berries and Peaches

Last week I went to the dentist. It did NOT go well. A simple procedure took a turn for the worse. To sum it all up, the dentist hit a nerve and then I could still feel as he was drilling. Not good. When lunch time rolled around, I went to make a green smoothie, but quickly found out, we were out of the green stuff (spinach). I threw this one together instead, and it was amazingly refreshing. If you use frozen fruit, keep in mind you will want to add some juice or water or else your smoothie will be too thick to drink.

The Ingredients

2 medium peaches

1 handful (1/2-1 cup) blackberries

1 handful (1/2-1 cup) blueberries

4-6 ice cubes

The Directions

1. Place all items in the Vitamix blender (or your blender of choice).

2. Blend until smooth.

3. Pour.

4. Drink!
