Pineapple-Spinach-Flax smoothie

We’re big fans of smoothies in our home, and I love that it is an easy way to get TB to eat some spinach without consuming a salad, plus we usually get some flaxseed in there. Flaxseed is a great source of fiber, as well as omega 3 fatty acids.  Also, while we had slipped some in giving TB more dairy once we moved east until we suspected it was causing him some problems, we are not big fans of dairy consumption in our home, and spinach allows us to get him a bunch of healthy vitamins and minerals. Plus, it’s good for Kevin and me too!

The Players

3 cups fresh pineapple cut in to large chunks

2 cups baby spinach

3 tablespoons ground flax seed

Handful of ice

The Fun

1. Place items in blender in order listed. Because the pineapple is fresh, no additional liquid should be needed.

2. Blend until smooth.

3. Pour.

4. Drink.

A Berry-Green-Flax Smoothie

This smoothie took a bit of a detour when I found out we were out of ground flax seed, but in the end, it worked out alright. I used some roasted whole flax seeds, which the vitamix pulverized anyway.

The Players

2 cups packed spinach (fresh)

1 cup greek yogurt– plain

2 cups mixed berries (frozen)

2 tablespoons roasted flax seeds

1-2 cups orange juice

The Fun

Place ingredients in blender in the order listed. Blend until smooth.

If you like your smoothie thinner, add more juice. If you like it thick, use less juice.

Drink!

Banana Flax Breakfast Muffins

First, let me apologize for some of the (lack of) quality of my photos lately. I’m really trying to play with the settings and flash a lot, and well, sometimes it doesn’t work out in my favor. LOL! Not that  my photos before were great, but it seems like I am lacking consistency. No biggie though, right?

I found the recipe for these muffins on Vegetarian Times, and I have to tell you, they are ridiculously moist and tasty. I could have eaten every last one myself. Fortunately, I know better and shared with my family. :)

The changes I made:

  • I used Almond milk instead of buttermilk.
  • I mixed it all up in my vitamix.
  • I used wheat flour.
  • I did not have enough banana to place a slice on top of the muffin.

This is definitely in rotation at our home now!
