Delicious Spring Time Pizza

On our Meal Plan for the week, we had pizza on the list. My husband told me it was the best one I had made yet. I’m still deciding which crust is my favorite, but we were in a hurry today, so we went with Pillsbury. Yes, I sometimes cut corners too.  :) I, of course, forgot to take a picture of the best pizza I’ve made for my husband, so this oldie but quite similar version will have to do.

Ingredients

1 pizza crust

1-3 tablespoons olive oil

2-3 bulbs green garlic, finely diced (use regular if you don’t have green)

4-6 green onions, thinly sliced (again, use regular yellow or white if you don’t have green)

1-2 medium tomatoes, seeded and diced

2 large handfuls of spinach, chopped

1 handful fresh picked basil, chopped

4-8 ounces freshly grated mozzarella (it’s worth it, I swear!)

The fun part

1. Heat oven according to crust directions.

2. Unroll crust on rectangle stone or pizza pan. Brush with olive oil.

3. Sprinkle garlic and onions over crust. Then tomatoes followed by spinach and then basil. Finally, add cheese according to your preference.

4. Bake until the cheese and crust are golden brown, approximately 15 minutes.

Spinach Tacos

This recipe was in our CSA newsletter, and we LOVED it!  The original recipe calls for red pepper flakes and cheese, but we skipped that. I also ate mine without salsa, because we only had the “light your world on fire” version of a local salsa. I can’t eat that!

Ingredients

1 bag Spinach

1 bunch green garlic, chopped

1 Tbs olive oil

1/2 tsp. cumin

salt and pepper to taste

1 bunch green onions, chopped

1 bag salad mix, rinsed

2 cups black beans, warm

salsa

sour cream

corn or flour tortillas

fresh chopped cilantro

Instructions

In a large pan, heat the olive oil on medium high heat. When hot, stir in the green garlic and cumin.

Sauté for 3 minutes, and then add in the spinach. Stir constantly, and cook another 2 minutes.

Add salt and pepper to taste.

In a large dry frying pan, heat each tortilla on both sides until lightly golden. Place in a towel in the oven at 200 F to keep warm until each tortilla is done. (I admit, I skipped this part!)

To assemble the tacos, place the tortillas, spinach, lettuce, green onions, beans, salsa, cilantro, and sour cream on the counter or table, and let each person make their own tacos.
