Saturday: TU game tailgate!

I have to tell you all, the weather people say the heatwave in Oklahoma is supposed to be over. Do you know what that REALLY means? Instead of 100+ degree days, we get mid-90s. For cooking and baking, the 10 degrees saved makes little difference. I think this is reflected in this week’s menu plan.
Monday: Leftover hotdish (forgot to take out the chicken for Sunday’s dinner…oops)
Tuesday: Crockpot chicken, biscuits
Wednesday: Fried Eggplant
Thursday: Veggie Nuggets (grownups going out!)
Friday: Bratwurst Burgers
Saturday:
Lunch: Leftovers
Dinner: Homemade fish nuggets
Sunday:
Lunch: Sandwiches (it’s all we have time for between church and nap, so this one never changes!)
Dinner: leftovers or go out

I have been missing in action due to travel for work and my guys being out of town. I learned something important while my guys were gone…I like to cook for other people and only for other people. I ate black bean dip, salads, pesto and egg salad all week while they were gone. Oh well…
This week’s menu is really light on cooking due to heat related fatigue. I was outdoors Saturday and remarked that it was kind of cool out. We checked the temperature and it said 103. All I can do is shake my head.
Monday: Basil Hummus with fresh vegetables and fruit
Tuesday: Mexican layer casserole
Wednesday: Leftovers
Thursday: Grilled Chicken with vegetables
Friday: Quinoa Quiche
Saturday:
Breakfast: Green Smoothies/eggs with cheese
Lunch: Leftovers
Dinner: Greek Feta Pasta Salad
Sunday:
Breakfast: Pancakes
Lunch: Sandwiches
Dinner: Crockpot chicken

Each Sunday, I make a rough plan of what we will eat during the next week. Well, when my husband is out of the country for his job, the day changes. None the less, I dislike quick runs to the store, so I try to plan our meals. Generally I over-plan, so often times, the meals for the end of the week end up happening at the beginning of the next. I am ok with that!
Also, during the week, I eat salads or leftovers for lunch. Kevin usually does the same at home or makes something quick like veggie burgers, so I do not plan lunches during the week.
Monday: Vegetable stir-fry with brown rice
Tuesday: Nachos with guacamole
Wednesday: Veggie burgers
Thursday: Chicken breasts and potato casserole
Friday: Tuna sandwiches or dining out
Saturday/Sunday: We’ll be in Kansas for my cousin’s graduation party, so I am not planning on anything.
